How to make pasta without spaghetti sauce

Run out of pasta sauce or you do not like the taste of spaghetti sauce? No worries, you can make this cheese sauce in less than 10 minutes, and trust me, once you try this recipe, you will ditch traditional pasta sauce because this is easy, fast, affordable, and delicious. Also, if you have a picky eater who does not like spaghetti sauce, then this recipe is for you.

The star of this dish is the cheese sauce. All you need is mozzarella, Parmesan cheese, heavy cream, garlic, basil, and tomato sauce. We need tomato sauce in this recipe to give it a little acidity. You can still taste a little bit of the tomatoes but not too much like in a regular spaghetti sauce. It adds flavor and color to the dish. Each component of this dish works well together and adds an amazing taste to this penne pasta dish.
This pasta dish is flavorful, cheesy, and makes you want to come back for more.

If you want this dish to be a lot cheesier, go ahead and double the amount of mozzarella cheese. I didn’t double my cheese in my video recipe because of dietary restrictions. The foods that I make in my videos are what my family eats, I do not just make it for the sake of making a great video. I want to be honest in all the recipes that I share, no lies. It’s so expensive to re-shoot a video, food ain’t cheap! 😂

 

So let’s talk about what’s in the recipe first:

Ingredients

Ingredients for easy penne pasta with cheesy tomato sauce: tomato sauce, heavy cream, parmesan cheese, mozzarella cheese, basil, olive oil, chicken, salt and pepper
  • Chicken breast: finely sliced and cubed.
  • Penne pasta: Cooked according to what’s written on the package instructions. You can also use different types of pasta.
  • Canned tomato sauce: You can substitute the canned tomato sauce with crushed tomato with Italian seasoning. The tomato sauce gives acidity to this dish so the food won’t be too bland.
  • Shredded mozzarella cheese: I only used one cup in this recipe but feel free to double the cheese to make the pasta even cheesier.
  • Parmesan cheese: I used the Kraft 100% Grated Parmesan cheese in this recipe. It tastes so good, it lasts for a long time, and it goes well with different recipes.
  • Heavy cream: The cream adds more deliciousness to this dish, but you can remove it from the recipe if you don’t want it. But make sure to use more cheese if you’re not using the cream.
  • Garlic: The minced garlic adds flavor and aroma to the dish.
  • Basil: I love using the basil that comes in a tube because it can last for a long time, and it tastes as good as fresh basil. But you can use fresh basil or dried basil.
  • Olive oil: I love using extra virgin olive oil because it adds smokiness to the dish, making this recipe taste so good. I love the Kirkland brand.
  • Salt and Black pepper to taste

Tips for making this easy penne pasta with cheesy tomato sauce

1- Cook pasta according to what’s written on the package instructions.


2- Meanwhile, heat a saucepan over high heat. When the pan is heated, add 2 Tbsp of olive oil. Wait until the oil is hot, but not burning, then add the chicken. Cook the chicken until it is cooked through and a little brown. Now season with a little bit of salt and pepper, remove chicken from the pan, and set aside.


3- Reduce the heat to medium-low heat. Add a little bit more olive oil to the pan. Add garlic, then sauté for about 30 seconds. Now mix in the tomato sauce. Cook for about 1 minute, then add the basil. Stir. Next, add black pepper while stirring. Reduce heat to low and let the sauce cook for about 2 minutes.


4- Now, add the cream, mozzarella, and parmesan cheese and combine.


5- Finally, add cooked pasta and cooked chicken. Gently mix everything until the pasta is well coated with the sauce. Remove from heat and let sit for about 5 minutes and serve.

  • 1 Box 12 Oz Penne pasta
  • 1 Pound Chicken breast Finely sliced and cubed
  • 1 Can 14.5 Oz Tomato sauce
  • 1 Cup Mozzarela cheese Shredded
  • 1/2 Cup Parmesan cheese Plus more for topping.
  • 1/3 Cup Heavy cream
  • 2 Tsp Garlic Minced
  • 1 Tbsp Basil You can use fresh basil or dried basil
  • 3 Tbsp Olive oil
  • Salt and pepper To taste

  • Feel free to double the amount of the cheese if you want this dish to be even cheesier. 
  • Use Italian seasoning if you do not have basil. 
  • When cooking the chicken breast, wait until the meat is all cooked through before seasoning it with salt and pepper so the meat will not create moisture and harden.
