There are so many ways to make fried rice. I have tried many different recipes over the years. Some are easy, others are complicated, some are too plain, and others have too many ingredients. So we’ve found the best and easiest way to make this restaurant-style fried rice recipe for you.

Tips on how we make the best fried recipe:

Don’t use too many ingredients:  If you use too many ingredients, it throws off the fried rice flavor – so try to keep it simple. But feel free to customize this recipe any way you want, just know what ingredients go together.
Be careful with herbs; they have robust flavors. The best one to use is green onions, which elevate the fried rice flavor very well. Celery tastes very good too in fried rice. But again, you can customize this recipe any way you want.

Ensure that the cooked rice you’re using is not too hard or too soft: If you use leftover rice that has been in the fridge for some time, it tends to get very hard and clumpy. This tends to happen with long-grain white rice, so our suggestion is to microwave the rice slightly, so it softens yet still retains the crispiness. If you use freshly cooked rice, make sure it’s not too soft and soggy or else the fried rice will become mushy and will not taste good. Let the rice cool off a bit before you use it in the fried rice. The fastest way to cool off the rice is to put it in the fridge or freezer for several minutes. 

Use a big and wide stir-frying pan to make the stir fry: The fried rice will taste better if it’s well mixed and well coated with the sauce. The only way to get this is to use a big and wide pan; that way, it’s easier to mix all ingredients. Our favorite pan is this cast iron. 

Use high heat: I’m a huge fan of using high heat when I cook. High heat gives you the vegetable’s crispiness and will prevent the rice from becoming soggy and sticking to each other.

Wait until the end of the recipe’s final step to add the soy sauce and immediately turn off your stove burner: Soy sauce tends to burn very quickly and makes the rice stick to the pan’s bottom. Add the soy sauce last, turn off the heat but do not remove from the stove. Mix very well until all ingredients are well coated. Remove from the stove, then add green onions, mix well again. Add more soy sauce if it still lacks flavors.

Best ingredients to use in the fried recipe

Cooked rice: You can use leftover rice or freshly cooked chilled rice. Our favorite rice to use for fried rice is white long-grain rice because it’s fluffy and not sticky when it’s cooked. But remember that the long-grain white rice gets very hard if it’s been in the fridge for a long time. Day-old rice is preferable. We also love basmati rice; it has a delicious flavor. Feel free to use any of your favorite rice.

Veggies: We love carrots and peas. You can use frozen or fresh vegetables; it is totally up to you. If you are going for restaurant-style fried rice, try to keep the ingredients minimal, but if you are not, and you love vegetables, then use all your favorite veggies. 

Onions and garlic: Gives the sweet aroma and flavor of the fried rice. 

Olive oil and sesame oil: For frying the veggies and rice and boosting overall flavor.

Eggs:  Feel free to substitute with cooked chicken or shrimp or meat or any of your favorite protein.

Soy sauce: You can use low sodium soy sauce or the original kind.

Green onions:  for more flavors

Prepare your vegetables: if you’re using frozen vegetables, make sure they are thawed before cooking. Chop the onion thinly and mince the garlic. Chop green onions. Set aside

Beat eggs slightly in a small bowl, set aside.

Heat your pan. Once the pan is hot, add olive oil and sesame oil.
Add onion and garlic. Saute for about 1 minute. Add in thawed vegetables and saute for about 4 minutes. Cook until tender. Push the mixture off to one side, then pour the eggs on the other side of the skillet. Wait for the eggs to flatten then scramble.

Now mix eggs and vegetables, add soy sauce. Turn the heat off but keep the pan on the stove.

Add 1 cup of rice at a time, mix well until rice is well coated.
Add green onion last. Mix well. Taste the rice, add more soy sauce, and a little bit of toasted sesame oil if it needs more flavors.
