This easy shrimp and leafy green vegetable soup is so delicious and easy to make. This dish does not require a fish sauce, soy sauce, chicken broth, or any artificial flavor boosters to boost its flavor. All the flavors are from this dishes’ natural ingredients. This easy shrimp and leafy green vegetable soup recipe can be done in under 30 minutes.

 

Shrimp and leafy vegetable soup or romazava ( pronounced roo-ma-za-va) is a popular Malagasy (Madagascar) dish. Romazava means clear broth in the Malagasy translation.

In the traditional Malagasy dish, we do not use any sorts of artificial flavor enhancers such as soy sauce, fish sauce, ketchup, or condiments when cooking. Malagasy cooking is simple, heathy and uncomplicated but delicious. We get all the flavors of our food from our natural ingredients.
Malagasy cooking has evolved a lot over the years. More people now use artificial flavor enhancers in their cooking but the traditional way of cooking food is still very popular.

Ingredients needed

Ingredients needed to make the easy shrimp and leafy green leaf vegetable soup: shrimp, onions, tomatoes, garlic and ginger on top of a wooden cutting board
  • Shrimp: We need raw and clean shrimp. You can peel or not peel the shrimp, but the soup will taste better if the shrimp is not peeled.

 

  • Leafy greens: You can use mixed leafy green vegetables or single. The flavor is elevated and tastes better if you use mixed leafy veggies. You can use bok choy, turnip greens, kales, spinach, or any leafy greens you have in hand. For this recipe, I used leafy greens that I got from my garden. I used bok choy, cabbage leaves, and a Malagasy leafy green that is not available in the United States. 

 

  • Onions: The onions will be sautéd to add flavor to the broth.

 

  • Garlic: The garlic will also be sautéd. It adds flavors and aromas to the soup.

 

  • Fresh ginger: We use fresh ginger in this dish, but if you don’t have fresh ginger, you can use powdered ginger. The ginger is peeled then crushed to release its juice. It will be sautéd with the onions and garlic to boost its flavor, and it will give spiciness, taste, and aroma to the soup.

 

  • Vegetable oil: For sautéing the sauce.

 

  • Water: For the broth. You can use chicken broth or vegetable broth too.

How to make shrimp and leafy green vegetable soup taste better?

1- Heat the pan over medium high heat: you must heat the pan before cooking so that the cooking time will be shorter and the vegetables will taste better. 

 

2- When the pan is heated, add the vegetable oil. Let the oil heat for about 30 seconds, then add the onions and garlic. Sauté until onions are translucent. Then add ginger. Sauté for about 1 minute.

 

3- Now add chopped tomatoes. Sauté until the tomatoes are soft. Smash them gently with a wooden spoon until you have a paste. This process will take about 3 minutes.

 

4- After that, add chopped leafy greens. Do not stir it. Cover the pot with the lid right away, and wait until the vegetables are boiling. Now remove the lid, then stir. You can now add 4-8 cups of water depends on how many veggies you have. Raise the heat to high-heat, then allow the soup to boil and cook for about 8 minutes. Now season with salt according to your taste.

 

5- Finally, add shrimp and combine for just a tiny bit. Put the lid back on and let boil. Let the the shrimp cook for about 2-3 minutes, then test taste again if it needs more salt. Remove from the stove and allow the soup to rest for about 5 minutes. 

Serve.

  • 4-5 Cups Leafy green vegetables (mixed) Bok choy, spinach, turnip greens, kale, or any leafy green vegetable you have in hand

  • 3 Garlic cloves Minced
  • 2 Tbsp Fresh ginger root Peeled and crushed
  • 4-8 Cups Water
  • Salt To taste

Notes

  • You can use any leafy green vegetable that you have in hand.
  • You can add a chili paste to this dish for more heat.
  • You do not have to use mixed green veggies.
  • If you want the greens to have a mild taste, use spinach.
  • You can use frozen green leaf veggies. 
  • If you do not have fresh ginger, you can use ginger paste or ginger powder.

That soup looks perfect for spring and summer days when it’s warmer. Do you ever serve this soup without shrimp or with another seafood or meat? My wife has shellfish allergies and I usually have to adapt recipes so we all can eat. It looks amazing though!
